Kirk and Sweeney takes its name from a Prohibition-era schooner caught rum-running in 1924 with 12,000 bottles aboard, and Burning Mast reaches back to the same era for its story: St. Elmo's Fire, the rare weather phenomenon that made ships' masts appear to glow during thunderstorms — neither lightning nor flame, and a comfort to sailors on the high seas. The rum inside is a first of its kind. The base is Kirk and Sweeney Reserva, a Dominican rum made from hand-harvested sugarcane processed into grade three blackstrap molasses, aged in a mix of American and French oak barrels for up to 12 years with repeated dumping, blending, and re-barreling. For Burning Mast, 19% of that Reserva spends an additional 11 to 19 days in barrels seasoned with red peppers, then rejoins the other 81%, bottled at 40% ABV. Expect caramelized vanilla, honeysuckle, spiced ginger, roasted almond, cinnamon, and cardamom on the nose, opening into earthy vanilla, caramel, nutmeg, and cashew before a wash of red pepper builds — cinnamon red-hots at first, then something closer to cayenne and hot paprika that Wine Enthusiast found escalating with each sip into savory jerk-spice territory. Reviewers split on heat level, but agree it's genuinely well made. The vintage bottle carries a heat meter on the front. Superb in a spicy daiquiri or over one large cube.
