Castle & Key's Experimental Series is where the distillery lets its mind wander, and the 2025 edition sends Kentucky rye to Haiti. The base is the house rye — 63% German rye, 17% yellow corn from Walnut Grove Farm in Adairville, Kentucky, and 20% malted barley — a blend of four- and five-year-old whiskeys aged in untoasted char #3 new American oak from Speyside Cooperage, made at the restored Old Taylor Distillery in Millville. It then spends over a year finishing in "Extra Old" rhum casks from an unspecified Haitian distillery — barrels that previously held cane-juice rhum aged at least six years, the same category as Barbancourt's aged expressions. Bottled non-chill filtered at cask strength, 58.05% ABV (116.1 proof), with only 1,800 cases produced. Master Distiller Brett Connors calls the series rare by design, meant to be shared with purpose. The result is unusually lush for a rye: brûléed banana, cream cheese frosting, dried pineapple, and Demerara sugar spiked with cinnamon and a hint of savory smoke on the nose, opening into fruitcake, blackstrap molasses, plum, hibiscus, rum-soaked raisins, fried plantain, black cardamom, and clove, finishing on currants, anise, cigar wrapper, and persistent dark sugar. Haitian rhum's grassy, funky character is the missing piece most rum-finished whiskeys lack — this one has it. Superb neat, and a genuinely strange, wonderful Manhattan.
