Restoration Rye was the first whiskey Castle & Key ever released under its own name, and the name is literal: it commemorates the multi-year restoration of the Old Taylor Distillery in Millville, Kentucky — Colonel E.H. Taylor's 1887 castle, sunken gardens, and springhouse, abandoned since 1972 and brought back to life when Castle & Key was founded in 2014. The first barrels went down in 2016, and this 5-year age statement marks the moment the distillery's own stock reached real maturity. The mash bill is unusual on purpose: 63% rye, 17% Kentucky-grown yellow corn from Walnut Grove Farm, and a high 20% malted barley — more rye than the old "barely legal" Kentucky style, less than the 95% MGP recipe, with the extra malt adding floral, nutty depth. Aged a minimum of five years in char #3 new American oak from Speyside Cooperage, blended from barrel "pods" grouped by sensory profile, bottled non-chill filtered at cask strength, typically around 100 to 106 proof. Expect vanilla wafer, dried apple, and candied orange framed by nutmeg and walnut on the nose, opening into cinnamon roll, brown sugar, peanut brittle, and allspice, finishing on pie crust, vanilla ice cream, and black pepper. Skurnik calls it just as good as last year's release if not better, and some of the best value in rye at $45. Sip it or stir it into a Manhattan.
