The 2022 theme was yeast: both distilleries fermented with a special aromatic yeast strain to amplify fruit and floral esters, and the resulting single malts were bottled without chill filtration, Yoichi at 48% ABV and Miyagikyo at 47% ABV.
Yoichi Aromatic Yeast layers bright tropical fruit and florals over the coastal Hokkaido distillery's signature coal-fired smokiness. Miyagikyo Aromatic Yeast is lush and estery, with pear, apple and jasmine on the Sendai distillery's elegant, fruity base. Tasted side by side they show exactly how yeast shapes spirit.
