Hard Rye Guy is distilled and aged at Castle & Key, the resurrected Old Taylor Distillery in Frankfort, Kentucky, from a mash bill of 60% rye, 20% corn and 20% malted barley. That relatively high malt content gives Pinhook's Castle & Key ryes a softer, fruitier profile than the 95% Indiana style. Pinhook describes the 2021 vintage as brimming with apricot, cinnamon and eucalyptus on the nose, followed by a rich palate of candied licorice, caramel and orange peel, and at 122 proof those flavors arrive with real intensity.
