Pinhook Rye'd On Rye Whiskey (Castle & Key)
Pinhook Rye'd On Rye Whiskey is a piece of Kentucky history: the first whiskey released from Castle & Key, the restored Old Taylor Distillery in Frankfort that Colonel E.H. Taylor built in 1887 and that sat abandoned from 1972 until its revival. Pinhook, the horse-racing-inspired brand that blends and bottles at Castle & Key, got first crack at the new distillate, and Rye'd On was the result.
It is a straight rye made from an unusual mash bill of 60% rye, 20% corn and 20% malted barley, distilled, aged and bottled at Castle & Key, and bottled at 97 proof at around three years old. Breaking Bourbon described delicate hay, cinnamon and peach on the nose, a slightly creamy, well-balanced palate of cinnamon, mint, peach and apricot, and a finish that warms up around the peach with mild oak, noting it avoids the grainy, harsh pitfalls of young rye and calling it a fascinating early look at the Pinhook and Castle & Key partnership. A gentle, fruit-forward rye and a collector's piece for anyone following Castle & Key.
