Pope Valley Winery Reserve Napa Valley Cabernet Sauvignon
Pope Valley Winery occupies a historic gravity-flow cellar built into a hillside in eastern Napa Valley in 1897, handcrafted over nine years from redwood timbers salvaged from the Oathill Quicksilver Mine, and it still ages wine in a century-old hand-dug cave. The Reserve Cabernet Sauvignon is the estate's top red, typically 92 to 94% Cabernet Sauvignon rounded out with small lots of Merlot and, in some years, Cabernet Franc. The fruit is fully destemmed and fermented for 21 days, then aged up to 24 months in French oak, 50% new, and bottled in 750ml at 14.6% to 15.1% ABV depending on vintage. The wine opens with black cherry, cassis, raspberry, star anise, violet, cedar, vanilla, cigar box and a trace of leather, then turns full-bodied and voluptuous with ripe dark fruit, baking spice, dry earth and bright acidity, finishing long on firm, ripe tannins and sweet oak. Wine Enthusiast rated it 92 points and Wine Advocate 90, and it has taken gold medals at the San Francisco Chronicle and Los Angeles International competitions. Decant 30 to 60 minutes and serve with grilled ribeye or braised lamb. Vintages may vary; we ship the current release.
