Bati Spiced comes from Fiji's South Pacific Distillery in Lautoka — opened in 1980 by the Fiji Sugar Corporation, and for decades the quiet source behind award-winning Fijian releases from Europe's best independent bottlers before Master Distiller Liam Costello cut the bulk contracts and built the Bati range, named for the warriors who protected the Fijian homeland. The Spiced starts from the same foundation as the rest of the line: hand-cut cane grown in Fiji's rich volcanic soil, distilled with the island's famously pure water, and aged two years in large, specially selected oak barrels in the tropical climate, which accelerates maturation and builds a deeper aromatic base than most spiced rums start with. It's then infused with warm spices and bottled at 76 proof (38% ABV). Expect vanilla and cinnamon leading the nose with brown sugar and a hint of the distillery's tropical fruit character underneath, opening into a warm, rounded palate of baking spice, caramel, and molasses, finishing soft and sweet.
