Botran Solera 1893 Rum

Botran comes from the same family and company that makes Ron Zacapa — and for a lot of drinkers, that's the whole pitch. Five Botran brothers, sons of Spanish immigrants, founded Industria Licorera Quetzalteca in the highland town of Quetzaltenango in 1939, and the house remains family-owned; 1893 is the birth year of Venancio Botran, one of the founders. Like Zacapa, the rum is made from virgin sugarcane honey rather than molasses, distilled on column stills, then aged in Quetzaltenango's cool mountain air roughly a mile and a half above sea level — the opposite of tropical aging, slower and more delicate. Solera 1893 is a blend of rums between 5 and 18 years old, matured through a modified solera system in ex-bourbon, re-charred American oak, and ex-sherry and port casks, bottled at 40% ABV. Difford's found mocha coffee, tarte tatin, caramel, and rolling tobacco on the nose with dark chocolate and cinnamon, opening into a rich, slightly sweet palate of buttered fruitcake, plump raisin, gingernut biscuit, dry oak, and salty caramel, finishing on black pepper and candied ginger.
