The Añejo is what happens when you put charanda in a barrel — and one Rum Ratings taster called the result a pot of gold. Charanda is Mexico's cane spirit, a protected denomination of origin made only in the highlands of Michoacán around Uruapan and named for the hill of red-colored soil where the region's first distillery was built; the Pacheco family's Uruapan is the reference brand. The Añejo takes the house single blended rum — estate-grown cane juice distilled on a copper pot still, married with molasses spirit from a modified French column, from cane grown at 4,180 feet in red volcanic soil — and ages it in ex-bourbon oak, bottled at 46% ABV; check your label for the exact age. It pours deep golden. Rum Ratings' drinkers found it completely different from the Blanco: a strong agricole nose with a hint of orange, a smoky taste with a dry, bitter finish and only a slight burn, the blanco's wildness mellowed into something smooth with a deep funk — one new-to-rum drinker tasted it in a tiki-bar flight and loved it enough to hunt a bottle. Expect the cane's grassy, mineral character wrapped in vanilla, light caramel, and oak, with a savory, faintly smoky depth and a long, dry finish.
