Three Sheets is San Diego's rum — made about fifteen minutes up the road from Pacific Beach in Miramar, where Cutwater Spirits began as the distilling arm of Ballast Point Brewing before the founders spun it off in 2016 and built one of the largest craft distilleries in the country. It was born as Ballast Point Three Sheets; the name changed, the rum didn't. Three Sheets is fermented from cane sugar and distilled on a combination of pot and column stills, and the barrel-aged expression takes that white rum and ages it like a bourbon — two years in heavily charred virgin American white oak — before bottling at 40% ABV with nothing added. Cutwater's own promise: toffee and caramel giving way to vanilla and tobacco, a rum that can hold its own.
