Don Papa is the rum that made the Philippines a category — and the one enthusiasts fight about most. Stephen Carroll founded the Bleeding Heart Rum Company in 2012 and named it for Papa Isio, a folk hero of the 1890s revolution on Negros, the sugar island the brand calls Sugarlandia. The 7 Year Small Batch (now labeled Single Island) is the original: molasses from Negros cane, column-distilled at the Bago distillery, aged around seven years in ex-bourbon oak in the tropical heat at the foot of the Mount Kanlaon volcano, and since 2022 also in ex-Rioja barrels, bottled at 40% ABV in the illustrated canister collectors chase — forty designs and counting. Diageo bought the brand in 2023. RumX's summary is fair: a rich, sweet, approachable rum closer to dessert than to a dry traditional style — vanilla, honey, candied orange, dried fruit, and a soft, sticky sweetness. Honest note, and it's not optional: lab tests have found added sugar, glycerol, and vanillin, a class action was filed in Illinois in 2022 over labeling, and The Rum Barrel found it artificial and too sweet to finish a sample.
