Single Barrel is the rarest thing Germana makes — one cask, selected personally by the Caetano family's master distiller Walter Caetano, bottled unblended so nothing in the barrel is softened or averaged out. The Caetanos have made cachaça by hand on Fazenda Vista Alegre in Minas Gerais since 1912, and the process hasn't changed: fifteen hectares of sugarcane grown without pesticides among 300,000 banana trees, hand-cut with machetes and pressed within 24 hours, fermented naturally with corn meal and wild yeasts, then run through a direct-fire copper pot still fueled by the cane's own bagasse, keeping only the heart. The single barrel releases take that distillate through a short rest in Brazilian bálsamo before long aging in 200-liter oak casks — the documented barrels were distilled in 2001 and bottled in 2007, originally selected for London's Zuma and Roka restaurants, and bottled at cask strength around 43.6% ABV. What you get is cachaça with the concentration of a spirit that's never been diluted by blending: deep amber, with cooked cane, dried fruit, cherry wood, and vanilla layered over bálsamo's peppery, herbaceous bite, a rich mouthfeel, and a long finish that keeps the grassy signature of the cane alive under the oak.
