Depaz is the distillery at the foot of Mont Pelée in Saint-Pierre, Martinique: when the volcano erupted in 1902 and killed Victor Depaz's entire family, he came back, planted cane on its slopes, and rebuilt in 1917 on an estate founded in 1651 by the island's first governor; the house is now owned by La Martiniquaise alongside Dillon, and RumX calls it among the most decorated agricoles on the island. VSOP is fresh cane juice from the volcanic fields, distilled on a single copper Creole column, aged in charred oak casks — The Lone Caner reports a seven-year age, well past the AOC's four-year VSOP minimum — and bottled at 45% ABV with nothing added and no filtering. Expect a reddish-brown pour with a nose of toffee, dried fruit, vanilla, and toasted oak over the estate's grassy, mineral cane, opening into a medium-bodied palate of caramel, spice, and cane with a peppery warmth, finishing moderately long.
