Rhum J.M Blanc White is the estate's agricole at 40% — the volcano's cane at an easy strength. The distillery sits in a valley at Macouba on the flanks of Mont Pelée at the northern tip of Martinique, where Jean-Marie Martin bought the Fonds-Préville estate in 1845 and marked his barrels with his initials; when Pelée erupted in 1902 and destroyed Saint-Pierre, the blast went west and the distillery survived. The house calls its volcanic soil the best terroir on the island, and every blanc starts the same way: fresh cane juice from the estate, fermented, distilled on a copper Creole column, then rested and slowly reduced — here to 40% ABV — with nothing added under the AOC. Rhum J.M's notes for its blancs: overwhelming aromas of fresh lime, honey, and cane flower balanced with savory vegetal notes and a beautiful expression of anise unique to the house, then a round palate of stewed banana and grilled pineapple — the J.M signature — over vegetal and mineral undertones. At 40% those notes come softer and gentler than in the 50 and 55: expect a lighter, sweeter, more approachable version of the same grassy, anise-tinged cane, with less pepper and a shorter finish.
