Rhum J.M V.O Rum

V.O. is the youngest vieux in Rhum J.M's aged range — the three-year minimum the AOC requires, from the volcano's cane. The distillery sits in a valley at Macouba on the flanks of Mont Pelée at the northern tip of Martinique, where Jean-Marie Martin bought the Fonds-Préville estate in 1845 and marked his barrels with his initials; when Pelée erupted in 1902, the blast went west and the distillery survived. The house calls its volcanic soil the best terroir on the island and runs its own cooperage to toast and char its barrels. V.O. is fresh cane juice from the estate, distilled on a copper Creole column, aged a minimum of three years in re-charred ex-bourbon American oak, and bottled at around 43% ABV with nothing added under the AOC; check your label. Three years is where J.M's cane and oak first meet in balance: expect the signature stewed banana, grilled pineapple, honey, and anise still bright and green, with the re-charred barrel's vanilla, light toffee, and toasted spice layered over rather than dominant, opening into a medium-bodied palate with a grassy edge and a peppery warmth, finishing moderately long.
