Cuvée du Moulin is named for the windmill — the 18th-century stone mill that's the emblem of Martinique's oldest plantation — and it's the estate's three-year vieux. Trois Rivières was founded in 1660 in Sainte-Luce on Martinique's south coast, named for the three rivers that border its cane fields — Oman, Bois d'Inde, and Saint-Pierre — and it earned the AOC Martinique in 1996; since 2004 its rhums have been made at the Rivière-Pilote distillery under the same house, now owned by Campari. Cuvée du Moulin is fresh estate cane juice, fermented, distilled on a single 22-plate copper column, aged a minimum of three years in oak casks — the AOC's threshold for vieux — and bottled at 40% ABV with nothing added. Good Spirits News notes the estate's warm climate matures rhum to the equivalent of a much older whisky or cognac without the decade-long wait. Three years is where Trois Rivières' cane and oak find balance: expect a nose of dried fruit, vanilla, toasted oak, and a faint coffee note over the grassy cane underneath, opening into a dry, medium-bodied palate of caramel, spice, and cane with the herbal edge of the blanc still present, finishing warm and moderately long.
