Gekkeikan Haiku Tokubetsu Junmai Sake
Gekkeikan Haiku is a tokubetsu junmai brewed at Gekkeikan's Folsom, California, brewery, which the Kyoto company founded in 1989 on Sierra Nevada snowmelt water and California-grown rice to bring its 1637 Fushimi heritage to the United States. Haiku is the Folsom brewery's answer to a chilled, aromatic premium sake: brewed with no added distilled alcohol from rice polished to 70 percent, a ratio the brewery deliberately raised from 60 to let more of the rice character through and reduce waste, and bottled at 14.6% ABV in a 750ml bottle with a purple cherry-blossom label. The brewery describes ripe pear, pineapple, apple and muscat grape on the nose, a palate that opens with pineapple and moves through apple, pear and mango with bold acidity and a hazelnut-like umami, and a dry, clean finish with lingering sweetness. Serve it well chilled, or at room temperature, and pair it with sushi, ceviche, salads or lightly fried food; it is also the Gekkeikan to reach for in a sake cocktail or a saketini.
