Gekkeikan Suzaku Junmai Ginjo is a Kyoto-brewed premium sake from the house founded in 1637 by Jiemon Okura in Fushimi, the sake district whose soft spring water has fed brewers for centuries and whose name, meaning "laurel crown," became the best-selling sake brand in the United States. Suzaku is named for the mythical phoenix-like bird that guards the south in Japanese tradition, and the bird is printed across the dark green bottle. It is brewed in Fushimi from rice polished to 60 percent of the grain, the ginjo threshold, with no added distilled alcohol, and bottled at 15.5% ABV in a 720ml bottle. The brewery describes a fruity nose of lychee, bubblegum, pineapple and mango, a modest palate of rice and apple with crisp acidity and a light bitterness that keep it refreshing while prominent umami gives it body, and a short, dry, refreshing finish.
