Azumaichi Junmai is the everyday classic from Gochoda Shuzo, a family brewery in Saga Prefecture on Japan's southern island of Kyushu, known for growing much of its own Yamada Nishiki rice and for a house style that puts balance and food-friendliness first. Junmai means pure rice: nothing but rice, water, koji, and yeast, with no added alcohol.
It is a gently rich, well-rounded sake that balances the natural sweetness of rice with a savory umami depth, and it finishes clean at 16% ABV.
