Heavensake Label Noir Junmai Daiginjo Sake Régis Camus x Niizawa
Heavensake Label Noir is the top junmai daiginjo assemblage from the French-Japanese sake house founded in 2016 by Régis Camus, the Champagne chef de cave named Sparkling Winemaker of the Year eight times by the International Wine Challenge, who applies the Champagne craft of assemblage to sake by blending different sakes with a brewery's toji into a single balanced cuvée. This one is made with Niizawa, the Miyagi Prefecture brewery destroyed by the 2011 earthquake and rebuilt, where Nanami Watanabe became toji in 2018 at age 22, the youngest female brewmaster in Japan at the time; Niizawa is famous for extreme polishing, and this blend is brewed with no added distilled alcohol and bottled at 15% ABV with a sake meter value of -2.4 and 1.6 acidity, a profile the house calls light and dry despite the slightly sweet reading. It comes in a 720ml all-black teardrop bottle. The house describes delicate florals with cantaloupe, tangerine, lychee and ripe apple on the nose, and a light-bodied palate of refreshing acidity, minerality and early-summer fruit with a lingering finish. Serve it chilled at 45 to 50°F in a white wine glass with uni, lobster, caviar, pata negra or Parmigiano Reggiano; opened, it keeps up to two weeks in the fridge.
