Yoi no Tsuki, sold in the US as Midnight Moon, is the daiginjo from Tsukinowa Shuzoten, a family brewery in Iwate Prefecture in northern Japan whose founders were village headmen who originally ran a koji shop. The toji is Hiroko Yokozawa, one of the few women holding the head-brewer title in the industry, who was born into the family business and has made sake for more than 25 years while her husband manages the company. The sake is brewed from Ginginga, a sake rice developed in Iwate, polished to 50% so that half of each grain is milled away before brewing, and fermented with a yeast the brewery calls Giovanni no Shirabe. It's pasteurized, bottled at 16% ABV, and finishes with a sake meter value around +3 and acidity of 1.4, so it reads dry rather than sweet. Importer notes describe strawberry, peach, grape, mint, and vanilla on the nose, then blueberry, dried nectarine, banana, mochi, and whipped cream on a soft, silky, medium-bodied palate with a crisp alcohol lift and a quick, tingly finish. Serve it chilled, 41 to 50°F, and drink it within a week of opening, since the aroma fades after that.
