SennzaFinne — pronounced "senz-uh-fee-nay," Italian for "without end" — comes from Seattle bar professionals Joey and Gillian Diedrick, who fell for amaro during a trip through Italy back in 2013 and set out to build their own homage to the tradition using Pacific Northwest ingredients. Every bottle is genuinely small-batch: just 400 bottles per lot, botanicals extracted through tiny pots at 190 proof, hand-bottled, and never colored with caramel. The lineup covers five distinct expressions, each built around a season's worth of foraged and local ingredients — Grassy Eden (spring), bright and vegetal with lovage, lemon balm, and Cascade hops; Golden Hour (summer), fruity and floral with berries, hyssop, and rose hips; Last Leaf (autumn), an earthy forager's dream built on porcini mushroom and pine resin; Rustling Wood (winter), rich and nutty with hazelnuts roasted at Ballard's Delancey restaurant; and Always, the year-round flagship, darkest of the range, with hibiscus, sarsaparilla, and ginger. Made specifically with cocktail use in mind, each one runs lower in sugar and higher in proof than typical Italian amaro.
