Always is the year-round flagship from SennzaFinne, a tiny Seattle amaro label founded by husband-and-wife bar professionals Joey and Gillian Diedrick after they fell for amaro during a trip through Italy back in 2013. While most of their lineup rotates seasonally, Always stays constant — a genuine homage to traditional Italian amaro built with Pacific Northwest sensibilities, made in batches of just 400 bottles at a time using organic and wild-harvested botanicals extracted through tiny pot stills, with no caramel added for color. The recipe centers on hibiscus, sarsaparilla, lemongrass, and ginger, rounded out with cinnamon, rhubarb root, and smoked paprika — genuinely one of the darker, spicier expressions in their range. Bottled at 35% ABV with lower sugar and higher alcohol than typical Italian amari, built specifically with cocktail use in mind. Expect hibiscus and lemongrass over warm ginger and root spice on the nose, a bittersweet, lush palate balancing dark herbal notes against a tart floral lift, and a long, persistent, gently bitter finish.
