Siete Leguas is named for Pancho Villa's legendary horse, said to gallop seven leagues — 21 miles — in a day when other horses managed one, and founder Don Ignacio González Vargas chose the name in 1952 as tribute to the revolutionary he admired. Seven decades later, Casa Siete Leguas remains family-owned in Atotonilco el Alto in the Jalisco highlands, and it's one of the most revered traditional producers in all of tequila. The house runs two distilleries 150 yards apart under NOM 1120: El Centenario, the 1952 original, where a volcanic tahona stone is still pulled by mules twice daily and fermentation happens in wooden tanks with the agave fibers left in; and La Vencedora, built in 1984, running brick ovens and a roller mill without fibers — the final tequila blending juice from both, all from estate-grown highland agave. The credential most drinkers don't know: Siete Leguas was the original producer of Patrón from 1988 to 2002, and famously refused to rush its methods when demand exploded.
