123 Organic — Uno, Dos, Tres — is the tequila of David Ravandi, who applied winemaking ideas of terroir and natural fermentation to certified-organic agave two decades before additive-free became a movement. The agave is grown organically and biodynamically in the red Tierra Roja soil of Amatitán in the Tequila Valley, harvested after as many as ten years, and made at NOM 1480, Tequila Las Américas, a certified-organic distillery in Amatitán; the bottles are hand-blown from recycled glass and the labels printed with soy ink on recycled paper, each with a Nahuatl creature — for Uno, the stars over the fields. Blanco is the pure mother of the line: organic blue Weber agave slow-cooked, fermented with native yeast, double-distilled, and bottled unaged at 40% ABV, USDA and EU certified organic and additive-free. The house describes it as clean and bright with green agave, citrus, and pepper. Expect a nose of cooked and raw agave, lime zest, white pepper, and a faint mineral, earthy note from the valley soil, opening into a crisp, medium-bodied palate of sweet agave, citrus, and black pepper with a clean, peppery finish. Honest note: it's a lowlands blanco, so it leans earthy and peppery rather than highland-fruity — the tequila to taste beside a Los Altos blanco to learn the difference.
