Reposado is Amarás's espadín given three months in oak — the rested member of a range from one of the largest artisanal mezcal houses in Mexico, built on a "from seed to sip" cycle that plants more agave than it harvests. Made in the Tlacolula valley of Oaxaca from eight-year-old espadín, cooked in a conical stone oven over oak, milled, fermented in pine vats, and copper-pot distilled, then aged a minimum of three months in oak barrels, bottled at around 37 to 40% ABV; check your label. The barrel is used lightly, the way a good reposado tequila is: expect delicate aromas of toasted oak, cooked agave, and caramel on the nose, opening into a soft, smooth palate of citrus, vanilla, and roasted hazelnut, the smoke sitting well in the background, finishing delicate and warm. Honest note: aged mezcal divides purists, who argue oak covers what makes mezcal mezcal — and this is a gentle, low-proof, deliberately approachable bottle rather than a rustic single-village pour.
