Casa Noble is triple-distilled and certified organic — two things almost no tequila is — from a single estate in the Tequila Valley, and Carlos Santana liked it enough to become a partner. Master tequilero José Pepe Hermosillo's family has grown agave in Jalisco for seven generations; the brand launched in 1997 and is made at NOM 1137, La Cofradía, in the town of Tequila, and Constellation Brands bought it in 2014. The Blanco — the old Crystal — is 100% estate-grown, CCOF-certified organic blue Weber agave matured up to fourteen years, nearly twice the industry norm, slow-cooked in stone ovens, fermented naturally in stainless, distilled three times in stainless pots with copper coils, and bottled unaged at 40% ABV in the square, heavy-based bottle that lights up on a backbar. InsideHook found it very grassy on the nose, carrying into a bright agave expression with strong lemon and grapefruit; the Crystal has a run of San Francisco World Spirits Competition medals going back to 2007.
