Casa Noble Añejo is two years in new French oak, and InsideHook found what most aged tequilas lose: a nice dryness at the end, with the barrel never overwhelming the agave. Casa Noble is triple-distilled and certified organic from a single estate in the Tequila Valley; master tequilero José Pepe Hermosillo's family has grown agave in Jalisco for seven generations, Carlos Santana is a partner, and it's made at NOM 1137, La Cofradía, in the town of Tequila under Constellation Brands. The Añejo is 100% estate-grown, CCOF-certified organic blue Weber agave matured up to fourteen years, slow-cooked in stone ovens, fermented naturally, distilled three times in stainless pots with copper coils, aged two years in new French white oak, and bottled at 40% ABV. InsideHook: dried fruit, sweet agave, butterscotch, a hint of minerality, and a spicy kick — where other aged tequilas veer toward whiskey, the barrel notes here stay in check, and so does the sweetness. The house has a run of San Francisco World Spirits Competition medals going back to 2007. Honest note: French oak gives dried fruit, spice, and tannin rather than the vanilla-caramel of bourbon wood, so this is the añejo for the Cognac and wine drinker — and two years is a full añejo term from long-grown organic agave, which enthusiasts respect even when they note the NOM. Neat, in a snifter, after dinner. Noble, two years.
