Madre Cuishe is the mother of the cuishe family — a tall, thin-trunked wild Agave karwinskii that grows in the dry valleys of Oaxaca and brings an herbal, mineral, faintly bitter-green character no cultivated agave has — and Catedral's single-agave bottling of it is the lightest, most elegant mezcal in the range. Catedral de Mi Padre, "my father's cathedral," was founded in 2022 by father-daughter duo Jeff and Sydney Block after eight years living in Oaxaca, partnering with six master mezcaleros, one per bottle, and specializing in mezcals from sustainably farmed wild agave. The madre cuishe is roasted in an earthen pit, crushed, naturally fermented, and double-distilled in copper in small batches, bottled at around 46% ABV; check your label. Good Spirits News found a mild woodfire perfume with a reticent agave aroma, then a very light, elegant distillate with a soft, feather-light touch on the tongue, the smoke fading quickly to leave a semi-sweet vegetal flavor.
