Catedral de Mi Padre, "my father's cathedral," was founded in 2022 by father-daughter duo Jeff and Sydney Block after eight years living in Oaxaca, partnering with six master mezcaleros, one per bottle, and specializing in mezcals from sustainably farmed wild agave rather than the espadín that dominates the US market. Tobalá is the prize: a small, slow-growing Agave potatorum that hides in the shade of oaks on rocky highland slopes and takes over a decade to mature, roasted in an earthen pit, crushed, naturally fermented, and double-distilled in copper in small batches, bottled at around 46% ABV; check your label. GSN found a perfect balance of agave and smoke on the nose, then a palate moderately heavy with creosote where the agave's sweetness creates a perfect foil, finishing semi-long with a pleasant, flavorful ending. Expect tobalá's signature: tropical fruit and florals on the nose, a rich, rounded, faintly sweet palate with mineral depth and a creamy texture, the smoke integrated rather than dominant, finishing long and elegant.
