Cierto Blanco Tequila

Cierto is made by Enrique Fonseca and Sergio Mendoza — the men behind Fuenteseca and Don Fulano — and claims 600-plus medals, the most-awarded tequila in history. Fonseca and Mendoza are fourth- and fifth-generation agaveros whose families have grown agave since the 1800s; Cierto is their additive-free luxury line, made at La Tequileña, NOM 1146, in the town of Tequila from fully mature estate agave in the red clay of the Atotonilco highlands, harvested plant by plant at the maduro and pinto stages, slow-cooked in low-pressure ovens, with each blend drawing on the Fonseca family's private tequila library. The Blanco is rested eight months in stainless before bottling at 40% ABV in the tall, thin, ornate bottle Paste calls striking and a bit impractical. Drinkhacker: exudes agave character — bright, fresh, expressive lime, roasted agave, and red pepper, then lightly sweet agave, fresh red and cracked black pepper, mint, grapefruit pith, minerality, and earth. Sip Tequila: delicate florals, light citrus, sweet herbs, a generous mouthfeel, slow-cooked agave, and a long, slightly sweet finish.
