Casa San Matías, NOM 1103, is a family-run distillery in the Los Altos highlands founded in 1886 and led by master distiller Rocío Rodríguez; Corazón de Agave is its value-priced single-estate brand for Sazerac, the owner of Buffalo Trace. The Reposado is 100% seven-to-ten-year blue Weber agave from a single Los Altos farm, cooked forty-eight hours in clay ovens, roller-milled, fermented seventy-two hours in open-air stainless, double-distilled in stainless pots, rested in ex-bourbon American oak, and bottled at 40% ABV. Agave Matchmaker's tasters: honey, oak, and orange on the nose that carry to the body and finish, barrel spice and agave sweetness, no burn, very easy — a great mixer, a good deal, and, for one, the pick of the line over the blanco and añejo. Expect cooked agave, vanilla, honey, and orange with light bourbon-barrel spice, smooth and approachable, with a short, warm finish.
