Carlos Camarena, the third-generation tequilero of La Alteña, created Ocho in 2008 with the late Tomas Estes, the Mexican government's first Tequila Ambassador, on the wine-world idea that agave, like grapes, tastes of where it grows; it's made at NOM 1474 in Arandas from 100% highland blue Weber agave from a single named field per vintage, slow-cooked in stone ovens, crushed by tahona, fermented with wild yeast in open wooden vats, double-distilled in copper, and bottled at 40% ABV, additive-free. Sip Tequila: cooked agave with bright citrus, black pepper, earth, and fresh grass on the nose, a full, expressive palate of agave, black pepper, cool mint, and tropical fruit, and a long, clean, refreshing finish. The house lists the Plata's aromas by field — clove, cardamom, ripe pineapple, and violets in one vintage.
