Yuu Baal Joven Ensamble Mezcal
Yuu Baal Ensamble is three agaves roasted, milled, fermented, and distilled together — espadín, madrecuixe, and tobalá — the traditional Oaxacan way of stretching scarce wild magueys. Yuu Baal is a social enterprise, a group of producers in San Juan del Río, San Luis del Río, Tlacolula, and Miahuatlán, Oaxaca, whose mission is to highlight native Oaxacan mezcal traditions with every step — planting, cutting, distilling — done by hand. The Ensamble's three agaves are cooked in an underground stone-lined pit, milled by tahona, fermented with wild yeast in pine vats, and double-distilled in copper, bottled at 48% ABV; every bottle is numbered by lot. Mezcal Reviews confirms the co-processed blend. An ensamble gives what none of its agaves does alone: expect the espadín's cooked-agave sweetness and gentle smoke, the madrecuixe's earthy, mineral, herbal edge — the brand's cult bottle — and the tobalá's wildflower-and-peach perfume, opening into a balanced, medium-bodied palate with more complexity than the Espadín and more approachability than a single wild maguey, finishing long and peppery. Honest note: enthusiasts call Yuu Baal hit or miss and the wild-agave bottles the hits — this is two of them in one, at a value price. For a serious Mezcal Negroni, an Oaxaca Old Fashioned, or neat, it's the brand's blend. Three agaves, one pit.
