Ultimatum Double Rock Oakville Cabernet Sauvignon
Ultimatum is a small-production Napa Valley label devoted to single-vineyard Cabernet Sauvignon from the valley's most pedigreed ground, and Double Rock is its Oakville bottling. Oakville is the heart of Napa Cabernet country, a two-mile band of gravelly alluvial fans and rocky hillside soils that ripen Cabernet with the valley's finest balance of power, perfume and fine-grained tannin; the Double Rock vineyard takes its name from the rocky, well-drained ground that forces vines to struggle and concentrate. The wine is made from hand-harvested, hand-sorted fruit, fermented in small lots with extended maceration, aged roughly 20 months in predominantly new French oak and bottled unfined and unfiltered at about 14.8% ABV. The 2019 vintage, one of Napa's finest of the decade, gives a deep, saturated purple wine with layers of cassis, black cherry, violets, graphite and dark chocolate, plush yet structured tannins and a long, mineral-tinged finish that will reward a decade or more in the cellar.
