Aspen Vodka is made on the banks of the Roaring Fork River in Aspen, Colorado, at what its founder calls the largest carbon-negative distillery in the world. Matthew Patel, a physician from Ohio, built the 18,000-square-foot Aspen Distillers on eight acres of former lumberyard, and the vodka is single-estate in the truest sense: non-hybrid, non-GMO heirloom red winter wheat grown exclusively on a 2,200-acre centennial farm in Colorado, milled on site before distilling, and cut with snowmelt that runs down the mountain into the natural aquifer beneath the property. Best Tasting Spirits found an aroma leading with caramel and lemon Danish, then a sweet lemon entry joined by caramel, silky wheat, and a soft mouthfeel, building to a lemon-and-milky-butterscotch peak. Honest note: it's a purity-first wheat vodka with a little more character than most — the butterscotch note is real — and until a 2024 distribution deal with WES Brands it was hard to find outside Colorado.
