Double Char is Bib & Tucker's six-year bourbon sent back into the fire. Inspired, the brand says, by the turn of the century when food was cooked over open flame, it takes the flagship Small Batch — Tennessee-sourced bourbon aged at least six years in lightly charred new American oak, from a 70% corn, 26% rye, 4% malted barley mash — and re-barrels it for another five months in a second cask that's been heavily charred and smoked. The extra aging pulls the proof down slightly, from 92 to 88, and darkens the color. Bourbon By Proxy found campfire smoke and roasted marshmallow leading the nose, then higher-rye spice — clove, white pepper, cinnamon — and said it punched way out of its weight class for an 88-proofer, drinking closer to 100 proof without the heat. The Whiskey Wash found it smelled like a crisp fall day — pie spice, sap, pine cones — then a mellow palate of smoked or cured meat, brown sugar, and savory potato chip, with caramel and vanilla arriving on a relatively long finish, opening up nicely with water. Honest note: both reviewers expected more char than they got — the smoke is a suggestion rather than a bonfire. Gear Diary called it a fire-forged version of one of their favorite bourbons.
