Dan Garrison founded the distillery in Hye in 2006, trained under Elmer T. HoneyDew starts as fully aged four-year straight bourbon, is infused with raw Texas wildflower honey from Burleson's in Waxahachie — not a honey liqueur, but bourbon with honey steeped in it — and is bottled at 80 proof.
