Heather Greene, the sommelier and whiskey writer, and Marsha Milam founded the company in Blanco, Texas in 2017 and hired Marlene Holmes, twenty-seven years at Jim Beam, to distill; Triple Cask blends a 70% corn, 22% malted rye, 8% barley bourbon Holmes distilled at Bardstown Bourbon Company, the same mashbill distilled in Blanco, and a Tennessee straight bourbon, married and bottled at 94 proof. Breaking Bourbon: cinnamon, cedar, and hazelnut on the nose; dried fig, baking spice, tobacco leaf, and sandalwood on the palate; and a finish of chocolate, hazelnut, and spicy oak with lingering cinnamon — a cold-weather bourbon, rich and warm. The Whiskey Wash notes the malted rye gives it a nutty, spicy signature most Kentucky bourbon lacks.
