Metze spent nearly forty years at MGP, the Indiana distillery behind half the sourced bourbon in America, and distilled Old Elk's whiskey there to his own recipes before the brand's Colorado operation came online; every Old Elk is brought down to proof by Slow Cut — adding Rocky Mountain water a little at a time over weeks, because Metze believes a fast cut shocks the spirit and strips flavor. Master's Blend Four Grain is his showpiece: 51% corn, 22.5% wheat, 19% malted barley, and 7.5% rye — a mashbill with barely enough corn to be bourbon — aged six to seven years and bottled at 105.9 proof. The Whiskey Wash: oak and pine, bananas Foster, golden marshmallow, and red cherry on the nose; milk chocolate, vanilla, and honey with a buttery mouthfeel and a mint-rye lift on the palate; and a tannic, mineral, dry finish — 7 out of 10, well blended.
