Thomas S. Moore founded the Bardstown distillery in 1889 that Sazerac runs today as Barton 1792, home of the 1792 bourbons; the Thomas S. Moore line, launched 2020, is Barton's extended-finish project — the 1792 high-rye recipe, fully matured in new charred oak, then given the longest wine-cask finishes in mainstream Kentucky bourbon. The Cabernet spends two to five years in casks that held Cabernet Sauvignon and bottles at 95.3 proof. Drinkhacker: toasty oak and dark chocolate with herbal, brambly notes on the nose; peanut shell, then blown-out fruit on a gummy palate, and a dry, dusty finish. The Whiskey Jug and The Whiskey Reviewer found more structure — dark cherry, tannin, and cocoa over the rye spice — and Nice Sipper preferred it to the Port. Expect the driest of the three: red-wine tannin, dark chocolate, black cherry, and oak over 1792's peppery frame.
