Willett restarted its own stills in 2012 after decades as a bottler of sourced whiskey, and its rye, made from a 74% high-rye mash bill and a 51% low-rye mash bill, quickly developed a signature profile: dill, cherry, mint and baking spice over caramel and oak. Eight years of Kentucky aging adds leather, dark fruit and toasted wood, and at nearly 132 proof every one of those flavors arrives at full volume.
