Willett, run by the Kulsveen family, spent decades as one of America's great independent bottlers before firing up its own stills in 2012, and its rye is now among the most respected in Kentucky. It is made from two mash bills, a 74% high-rye and a 51% low-rye recipe, and has a signature profile of dill, cherry, mint and baking spice over caramel and white oak. Nine years in hand-selected barrels layers vanilla, caramel, leather and toasted oak over the grain, and 116.8 proof delivers it with real intensity and a long, spicy finish.
