Woodinville 8 Year Old Bourbon Whiskey
Woodinville Straight Bourbon Whiskey Aged 8 Years is the oldest release yet from Woodinville Whiskey Company, the Washington distillery founded in 2010 by Orlin Sorensen and Brett Carlile, and the payoff on a barrel experiment started more than a decade earlier. Working with Independent Stave Company, they filled eight test barrels of different builds and after about four and a half years ran the whiskeys through a gas chromatograph to find the one richest in furfural, vanillin and guaiacol. The winner was a heavily toasted, lightly charred barrel made from staves seasoned 24 months in open air, and because the light char left a slight graininess, they let it ride another four years. The bourbon is Woodinville's higher-rye recipe, 55% corn, 35% rye and 10% malted barley, from the Omlin family farm in Quincy, Washington, aged in the company's private barrel houses and bottled at 100 proof. Breaking Bourbon found black raspberry, cherry, vanilla and almond on the nose, dark cherry, apricot, maple syrup and leather on the palate, and a long finish of baking spice, cream soda and brown sugar. It went national in September 2024.
