Woodinville Whiskey Co. Toasted Applewood Staves Finished Bourbon
Woodinville Straight Bourbon Whiskey Finished with Toasted Applewood Staves started life as the 2017 edition of the Harvest Release that Woodinville Whiskey Company puts out each fall, and it proved popular enough that the company brought it back as a national release in the fall of 2023. Woodinville was founded in 2010 by Brett Carlile and Orlin Sorensen in Woodinville, Washington, and joined Moët Hennessy in 2017. The bourbon is the house recipe, 72% corn, 22% rye and 6% malted barley from the Omlin family farm in Quincy, Washington, filled into new oak built from staves seasoned 18 months in open air and aged at least five years in the company's private barrel houses in central Washington. Once the whiskey is fully mature, staves of toasted applewood are added to the barrel for a finishing period, and the result is proofed to 100 with purified Cascade Mountain water. The distillery's own notes put apple and berry aromatics over the bourbon's base of crème brûlée and spice on the nose, rich caramel, dark chocolate and vanilla bean on the palate, and a sweet, lingering finish. It is a fall whiskey, as good in a hot toddy as in a Glencairn.
