Akashi-Tai Honjozo Tokubetsu is the light, dry pour from Akashi Sake Brewery, a family house founded in 1856 in the fishing town of Akashi on Osaka Bay in Hyogo Prefecture and run today by Kimio Yonezawa as both president and full-time toji. A honjozo adds a small amount of distilled alcohol at the end of fermentation, a traditional technique that lifts aroma and lightens the body, and the tokubetsu designation marks a polishing ratio of 60 percent, further than the grade requires. The rice is Gohyakumangoku grown in Hyogo, the variety prized for clean, crisp sake, and the brewery still makes it by hand, measuring the data but leaving the final decisions to the brewers' senses. The brewery describes light aromas and flavors of lemon, lime and straw, lively on entry, then soft and citrusy with a well-balanced, gently sweet finish, bottled at 15% ABV in a 720ml bottle. This is the style Japanese drinkers reach for with a meal and the one that takes warming best: serve it chilled, at room temperature or heated to 40 to 50°C, in a tokkuri and ochoko. Yonezawa also recommends it in cocktails in place of gin or vodka. Pair it with tempura, grilled or smoked meats, yakitori or cheese.
