Arak is made by distilling grape wine and redistilling it with aniseed, producing a clear spirit with a clean licorice flavor that turns milky white the moment cold water is added, a ritual known as "the milk of lions."
Al Rayan is a step up in smoothness, with a rounded anise character, a clean grape spirit base, and a long, warming finish. Serve it the traditional way, one part arak to two parts cold water, then ice, never the other way around, in a small glass alongside hummus, tabbouleh, grilled kebabs, and olives.
