The yeti on the label comes from a real book: the Hokuetsu Seppu, an 1837 chronicle of life in Japan's snow country written by Suzuki Bokushi — an actual ancestor of the Aoki family, who have run Aoki Shuzo in Niigata's Uonuma region since 1717. The Yuki Otoko, or Snow Yeti, is said to haunt the local mountains and guide lost travelers home, and the brewery honors the legend literally: a portion of proceeds funds local mountain search-and-rescue. The brewery sits in one of the snowiest regions in Japan, and while Niigata is famous for tanrei-karakuchi (light, crisp, dry) sake, Aoki Shuzo aims for tanrei-umakuchi — crisp and dry but with real rice umami preserved. This honjozo is brewed from Gohyakumangoku and Koshi Ibuki rice polished to 65%, with soft well water from Mt. Makihata and a small traditional addition of distilled alcohol that sharpens the finish. SMV +8 (genuinely dry), 15.5% ABV. Expect a super fresh, clean palate with a light, creamy mouthfeel and a crisp mineral edge like sparkling water — one fan describes it dancing across the snow rather than sinking in.
