Aperitivo Cappelletti, also known as Specialino, may be the oldest wine-based red aperitivo still in production. It is made by the Cappelletti family, now in its fourth generation, in the Trentino region near Trento at the foot of the Dolomites. Unlike Campari or Aperol, which are spirit-based, Cappelletti is built on a base of Trebbiano wine infused with herbs, roots and citrus, giving it a softer, fresher, more wine-like character. Bottled at 17% ABV in a 750ml bottle.

The taste is vibrant bitter orange and herbs with a gentle, grapey sweetness and a clean bitter finish. Legend says Austrian soldiers in World War I ordered it topped with the local sparkling wine, and the Spritz was born; today three parts prosecco, two parts Cappelletti and a splash of soda over ice with an orange slice is still the definitive serve. It also makes a lighter, brighter Negroni.
